Pizza with eggs and bacon. Italian appetizer. Stock

Who says pizza is only for lunch or dinner? This breakfast pizza is a fresh and hearty way to start the day, combining crispy bacon, creamy avocado, and perfectly baked eggs on a golden crust. It’s satisfying, protein-packed, and endlessly customizable—ideal for weekend brunch or a special morning treat.

Whether you’re making the dough from scratch or using a pre-made base, this recipe is simple, delicious, and guaranteed to turn heads at the breakfast table.

Ingredients

For the dough

  • 1 ball of homemade or store-bought pizza dough
  • Olive oil, for brushing

For the toppings

  • 3 large eggs
  • 4–5 slices of cooked bacon, chopped
  • 1 ripe avocado, sliced or diced
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup shredded parmesan (optional)
  • Salt and pepper, to taste
  • Optional: cherry tomatoes, arugula, red pepper flakes, or hot sauce

Instructions

1. Preheat the oven
Preheat your oven to 475°F (245°C). If you’re using a pizza stone, place it in the oven to heat up as well.

2. Roll out the dough
Roll the pizza dough into a 12-inch circle or rectangle. Transfer to a baking sheet lined with parchment paper or a floured pizza peel if using a stone. Brush the dough lightly with olive oil to prevent sogginess.

3. Add cheese and bacon
Sprinkle the shredded mozzarella (and parmesan, if using) evenly over the dough. Add the chopped cooked bacon on top.

4. Crack the eggs
Carefully crack 2 or 3 eggs directly onto the pizza. Leave space between them to avoid overflow. Sprinkle a bit of salt and pepper over the eggs.

5. Bake
Bake for 10–12 minutes, or until the crust is golden, the cheese is bubbling, and the eggs are set but still slightly runny in the yolk (or longer if you prefer firm yolks).

6. Add fresh toppings
Remove the pizza from the oven and let it cool for 2–3 minutes. Add fresh avocado slices and any extras like arugula, cherry tomatoes, or a drizzle of hot sauce.

7. Slice and serve
Cut into slices and serve warm. This breakfast pizza is best enjoyed immediately while the eggs are still creamy and the avocado is fresh.

Tips for Success

  • Use cold eggs straight from the fridge to help them set slower in the oven.
  • Precook the bacon until crispy to avoid sogginess.
  • Add avocado just before serving to keep it green and fresh.
  • If you’re making this for a crowd, bake several smaller pizzas for easier serving.
